To skillet add spaghetti sauce. Truly a great recipe. Add the cutlets and cook just until brown about 2 minutes per side. Add pepper and cover with clingfilm.
Add coated chicken and pan fry for about 8 to 10 minutes each side or until chicken is cooked through and juices run clear. Dip the flattened chicken breasts escalopes in the beaten egg followed by the parmesan breadcrumbs. Dip chicken breasts into beaten egg then into breadcrumb mixture to coat. Brush both sides of the cutlets with the herb oil.
Place coated chicken on the prepared baking tray and bake in the preheated oven for 40 minutes or until no longer pink and juices run clear.
